ROASTED BRINJAL PATCHADI
Ingredients:
500 grms brinjal choose 1 big one
1 big onion chopped
1 tomato remove seeds chopped
2 green chillies chopped
5 pips garlic chopped fine
1 tbs finely chopped ginger
2 tbs of thick coconut milk
2 tbs chopped coriander leaves
Little lime juice
Salt to taste
Method:
Roast the brinjal and remove the charred skin.
Mash it nicely with a spoon.
Now mix all the above ingredients in a bowl, except the coconut milk.
Add in the cooked mashed brinjal with the ingredients.
Keep it in the fridge. Add the coconut milk at the time of serving.
A very tasty patchadi. Try it once.
