SIMPLE MANGO PUDDING

This is a very simple mango pudding.
You can add in diced mango pieces instead of nata de coco

SIMPLE MANGO PUDDING

Ingredients:
3 ripe mangoes
½ cup sugar
½ cup evaporated milk
2 ¼ cups water
1 tbs agar agar powder
2 tbs of nata de coco

Method:
Peel and chop the mangoes coarsely.
Combine the mango with ¼ cup of water.
Process until smooth.
Press the puree through fine sieve, over a bowl.
Discard the solids.

Bring 1 cup of water to boil, add the sugar, stir until dissolved.
Remove and keep aside to cool.
Bring another cup of water to boil, add in the agar, agar powder.
Stir until dissolved, let it come to one boil, remove and cool a bit.

Now add the mango puree, sugar syrup, agar agar solution,
and also the ½ cup of evaporated milk.
Use a whisk to stir the contents well.
Add in the nata de coco, mix nicely.
Pour the mixture into small cups.
Cover and chill for 3 hours or over night.

Note:
You can even do the pudding without the nata de coco.
You can use mango cubes instead.
Those who are not vegetarians can use 3 tsp of gelatine in stead of agar agar powder.
