ERAL KOLAMBU ( NIthi )

Folks I wish to share with you the recipe of eral kolambu
courtesy : my childhood friend

There is the recipe

Prawn - 1/4 kg

To grind Ingredients
Onion - 1.5
garlic - 3 pods
ginger - 3/4 inch
Green chillies - 3 long

tomato - 2 small

coconut thuruval - 2 tbspn
pepper corns - 1 tbsp
sombhu - 1/2 tsp

Thaalippu ingredients
Oil - 2 tbsp
curry leaves - 1 kotthu for the nice aroma
cloves - 4
cinnamon - 1 inch

Powders
manjal thool - 1 tsp
shakthi masala chilly pwd or homemade - 2 tspns or less as we have added green chillies n pepper alreasy
coriander - 1 tbspn

Garnish
coriander leaves
lemon juice


Method
First add 2 tspns of oil and add the "To grind ingredients" until green chillies one by one and fry well until
the raw smell of onions disapper. Now add tomatoes and saute until they are mushy. Once u notice the oil seperating
add coconut thuruval, pepper corns and sombu and fry them not more than 1 minute. Cool this down and grind it into
a smooth paste

Marinate the prawn with little salt and turmeric and set aside while the above is cooling down

Now take a kadai and add the thaalippu ingredients. U should get the nice aroma of curry leaves and cinnamon.
At this stage add the ground paste and stir for few seconds.Dont stir too much as we have done agood amount of frying
in the earlier stages. Add all the powders and salt to taste. When the raw smell of powders disapper add the marinated prawns and upto 2
cups of water. Check the consistency that u need and add extra or less water.
Simmer the gravy for 20- 30 minutes. Check the prawns by tasting. If the masalas have not sunk in simmer for some more time.
Garnish with coriander leaves and lemon juice

PRAWN SAMBAL



PRAWN  SAMBAL                                   


Ingredients:

1 kg large prawns, shelled leaving tails intact
To Grind:
10 shallots
4 garlic pips
2 cm piece ginger
2 tbs chilli paste
2 big onions chopped
1   big tomato chopped
3 tbs oil

Seasoning:
Salt to taste
Sugar to taste
cup tamarind juice ( from 1 tbs pulp)
2 tbs thick coconut milk   ( optional)

Method:
Heat oil in a wok, fry ground ingredients until fragrant.
Add in onions, tomatoes and fry till the tomatoes are mashed.
Add in the tamarind juice. Cook till oil rises.
Add in the prawns, sugar and salt and cook till the prawn changes colour. Lower the heat and add the coconut milk. Stir and cook.
Then dish out and serve with spring onion curls.

CHILLI PRAWNS

CHILLIE PRAWNS
Ingredients:
1 onion finely sliced
1 tbs ginger finely chopped
1 tbs tomato paste
1 tbs light soy sauce
1 tbs lime juice
tsp tumeric powder
tsp chillie powder
1 tbs crushed chillie flakes
3 tbs cooking oil
Salt to taste
10 large prawns, cleaned and deviened.
Little chopped spring onion leaves for garnishing

Method:
Marinate the prawns with tumeric powder,
Chillie powder and lime juice for about half an hour.
Fry in little oil, till crisp on both sides. Set aside.
Heat the remaining oil in a wok.
Add the ginger and onions. Saute for few minutes
Till the onions are limp.
Add tomato paste, soy sauce and chillie flake
And stir fry for a minute till oil seperates.
Add the prawns and about 3 tbs of water.
Fry for few minutes blending spices well.
Taste for salt and remove.
Garnish with chopped spring onion and a slice of lime.

BUTTER PRAWNS

There are many versions of this butter prawns.
Indian, Chinese, Malay.
Some use coconut flakes,and oats.
This is a simple style.


BUTTER PRAWNS

Ingredients:
500 grms large prawns feelers and legs trimmed
1 tsp salt
1 tsp sugar
tsp pepper
1 tsp sesame oil
3 tbs cornflour
Marinate all the above items for 30 minutes.

Oil for frying.
2 tbs evaporated milk
4 egg yolks
1 tsp sugar
tsp pepper
tsp chicken granules or chicken cube
Unsalted butter
4 pips garlic chopped finely
5 birds eye chillies chopped
2 sprigs curry leaves
1 tsp fish sauce

Method:
Fry the marinated prawns and remove.
Combine the egg yolk, milk, salt, pepper and
chicken granules in a bowl and beat .

Heat about 3 tbs of butter in a wok.
Pour the yolk mixture from a height and stir
very quickly with a pair of chopsticks to get
crispy strips of eggs. Remove from wok.

Heat another 2 tbs of butter in a clean wok.
Fry the chopped chillies, garlic and curry leaves.
Now stir in the fried prawns fish sauce and the
fried strips of eggs. Stir well and serve immediately.

SPICY GARLIC BUTTER PRAWNS


Ingredients:


Butter - 2tbsp
1/2 Kg Prawns - Cleaned
Sugar - 1/2 tsp
Salt - 1 tsp
Chilli Powder - 2 tsp
Sesame oil - 2tsp
Cornflour - 2 tsp
Meat Curry Powder - 2tsp
2 eggs lightly beaten
Grated Coconut -2 tbsp
Nestum/oats- 2 tbsp
Pepper -1tsp
Garlic - 4 cloves (chopped)
Sprigs of Cury leaves
Chinese Cooking Wine - 2tbsp
Oyster sauce - 1tbsp

Method:
Marinate the prawns with 1/2 tsp sugar, 2 tsp sesame oil, cornflour,chilli powder, garlic, curry leaves, chinese wine and oyster sauce and fry the prawns till goldeb brown.

Combine the Curry powder, eggs, grated coconut, oats, salt & pepper in a bowl. Heat the pan with butter. Stir in the mixed mixture very quickly with chopsticks and make it into crispy strips. Add in the fried prawns and season and stir fry.

PRAWNS VARUVAL

Here is a nice prawn varuval recipe. It will be a very good party dish. Kugan98



PRAWNS VARUVAL

Ingredients:
500 grms medium prawns cleaned
I big onion sliced
2 tbs oil
1 sprig curry leaves
½ tsp aniseeds
1 tsp lime juice or little more
Little cut coriander leaves
Salt to taste

To Be Ground To Paste Raw:
150 grms big onion chopped
8 dry red chillies
6 pips of garlic
1 tbs coriander seeds
½ tsp cumin seeds

1 tsp ginger paste
1 tsp garlic paste
¼ tsp turmeric powder

Method:
Heat a wok with the oil. Add in the aniseeds and curry leaves. Add in the sliced onions, saute well.
Add in the ground paste, fry till the raw smell goes.
Add in the ginger and garlic paste. Add also the turmeric powder.

Stir fry nicely till the oil seperates.
Add in the cleaned prawns, salt and sprinkle little water.
Stir fry till the prawns are cooked, and the dish little dry.
Add in the chopped coriander leaves. Off the stove.
Add in the lime juice stir well and remove.
Nice side dish for bread or rice.

PRAWNS THOKKU

here is my version of Indianized prawns.

PRAWNS THOKKU

Ingredients:

500 grms medium prawns cleaned
1 big onion chopped
1 big tomato chopped
1 tsp ginger paste
1 tsp garlic paste
2 green chillies sliced
2 tsp chillie powder
1 tsp coriander powder
¼ tsp turmeric powder
½ tsp mustard seeds
1 tbs oil
Salt to taste
Little lime juice
Little coriander leaves

Method:
Heat a wok with the oil. Add in the mustard seeds.
When it splutters add in the chopped onions.
Fry till they become a little limp. Add in the ginger, garlic.
Sauté again, add in the tomatoes, cook till mushy.

Now add in the chillie, coriander and turmeric powders.
Stir nicely, till the raw smell goes.
Now sprinkle little water, mix nicely.
Add in the cleaned prawns, salt and allow the prawns to cook.
The prawns will cook in a minute. Do not overcook the prawns.
Remove and add the lime juice, garnish with the coriander leaves.
Serve with rice the Indianized prawns.
