SWEET PUTTU

SWEET PUTU

Ingredients:

2 cups steamed flour
1 cup of grated coconut
½ cup sugar
½ tsp cardamom powder
1 tsp of ghee
A pinch of salt.

Roasted cashew nuts and raisins are optional

Method:
Put the flour in a big basin.
Add salt and sprinkle little warm water.
Sprinkle the warm water, little by little.
Mix it like fine breadcrumbs, using your fingers.

Now add the cardamom powder, and the grated coconut.
Mix again nicely. Steam the flour using a steamer, or a putu pot.
Steam the flour for about 20 minutes.
Remove and immediately add in the ghee and sugar.
Also add the nuts and raisins if using.
Mix nicely again. The sugar will melt in the heat.


Note: If you mix the sugar in the flour before steaming,
the flour will not be cooked well.

Those who like a light brown colour,
Make a one string syrup with ½ cup of jiggery.
Mix it in the steamed putu.
