BIG BRINJAL
ROASTED BRINJAL
COOKED BRINJAL
Ingredients:
500 grms brinjal choose 1 big one
2 onions chopped fine
2 big tomatoes chopped fine
1 tbs garlic chopped fine
1 tbs ginger grated fine
2 green chillies chopped
½ tsp coriander powder
½ tsp cumin powder
½ tsp red chillie powder
½ tsp garam masala powder
1 tsp sugar
Little lime juice
Salt to taste
½ tsp cumin seeds
2 tbs oil
2 tbs chopped coriander leaves
Method:
Apply oil all over the brinjal . Insert a skewer through the brinjal .
Roast on a gas top, keeping the flame very very low.
Keep rotating the brinjal . The skin on the brinjal should be charred. When you touch the brinjal will feel very soft.
Remove it to a plate. When cool peel off the charred skin.
Mash the cooked brinjal and keep aside.
Heat a wok with the oil, add in the cumin seeds.
When it splutters, add in the onions and sauté till they turn
lightly brown. Add in the garlic and ginger and fry for a minute.
Add in the tomatoes, and green chillies.
Stir nicely and cook, add in all the powdered spices.
Keep stirring so that it does not stick to the wok.
Sprinkle some water if needed.
Add in the cooked mashed brinjal , salt and keep on stirring.
The brinjal should be nicely mixed with the spices.
Add in the sugar and lime juice. Add in the chopped coriander leaves.
Stir nicely and remove.
