Stuffed Brinjal in Tomato Onion gravy Madhu Sree

Ingredients:

Brinjal small size - 3 or 4
Red chillie powder
Turmeric power - 2 pinch
Ginger garlic paste - 1 tbs
Salt - Depends upon the taste
Tomato - 4
Onion - 2
Oil

To temper:

Mustard seeds.
Urad dal.
Bengal gram.

To garnish:

Coriander Leaves

Method:

Wash the brinjals. Part slice each brinjal into 4 or 6 sections juz like flower .

Grind 2 tomatos, 2 onions. Add salt, chilli power, turmeric powder, Ginger garlic paste and mix well..

Fill the brinjal with the mix prepared and stuff it as much as you can.

Now heat a pan, add 2 tbs oil and fry the brinjal. Let it half cook.
Then, remove from the pan.

Now grind the rest 2 tomatoes and mix it with the remaining tomato mix.

Now, heat another pan or the same pan :P . Put little more oil and add the tempering things. After tht, pour the tomato mix tht is prepared. Add little more salt as 2 tomatoes mix has been added as well.

Now put the half cooked brinjal and mix well. Close the lid for few more minutes. Let is cook well.

After ensuring that the brinjal has been fully cooked. Remove the fire.

Garnish and serve. Tastes yummmy
