RED BEAN PASTE

RED BEAN PASTE

Ingredients:
500 grms red beans soaked over night.
400 grms sugar
1 cup vegetable or peanut oil
1 tbs of plain flour

Method:
Clean and boil the beans on a medium heat.
Cook until the beans are very soft.
Strain the water from the beans and blend them
Into a puree in a blender.
Press the puree through a sieve, discarding the skins
Which will be left in the sieve.
( You can skip this step if you do not want a smooth paste)

Now place the thickened puree in a wok with the sugar.
Flour and oil.
Over a slow flame keep on stirring until it becomes a thick paste.
Stir and scrape vigorously, so that it does not stick to the bottom.
Remove from heat, cool and use as called for in the recipe.

Note: in english it is known as red bean
kidney beans or adzuki beans.
In hindi it is known as rajmah
