FRIED TAPIOCA BALLS
Ingredients:
2 cups cooked and mashed tapioca
1 cup grated coconut, white part only
½ cup sugar
A pinch of salt
Oil for frying
Batter:
½ cup all purpose flour
¼ cup corn flour
1 tbs rice flour
1 tsp baking powder
½ tsp salt
180ml water
Method:
Mix nicely the cooked tapioca, coconut, sugar,
and salt well.
Make the mixture into golf size balls. Keep aside
Prepare the batter by mixing all the ingredients together.
Heat a wok with oil.
When the oil is hot, dip the tapioca balls into the batter.
Put the balls into hot oil to deep fry.
Do not crowd the wok with the balls.
When the balls are golden brown, remove and drain
on a kitchen towels.
Serve as a snack with tea.
