BITTERGOURD IN TOMATO SAUCE

BITTERGOURD IN TOMATO SAUCE.

Ingredients:

300 grms long bitter gourd cut into small pieces
2 big tomatoes steamed and pureed
1 big onion chopped
2 tsp chillie powder
¼ tsp tumeric powder
¼ tsp asafoetida powder
2 tsp tamarind paste
½ tsp mustard seeds
½ tsp cumin seeds
1 sprig curry leaves
1 tbs oil
Salt to taste
Jaggery to taste (optional )

Method:

Add a liitle salt to the cut bitter gourds and keep aside. (squeeze out the liquid later)
Heat a wok with the oil. Add in the mustard seeds and cumin seeds.
After the seeds splutter, add in the onions, curry leaves. Sauté well.
Now add in the tumeric , chillie and asafoetida powders.
Stir well, add in the pureed tomatoes, and the tamarind paste.
Mix well, add in squeezed bitter gourd, salt and little water if the mixture is very thick. Let it cook till it is semi thick and the bitter gourd cooked. Add in the jaggery , stir nicely and remove.
Serve as a side dish or with bread.
