PEANUT SUNDAL



Ingredients:

2 cups raw peanuts
1 medium onion chopped
½ a carrot grated
½ tsp minced ginger
3 green chillies chopped
1 sprig curry leaves
½ tsp mustard seeds
½ tsp urad dal
1 tbs of fresh coconut scrappings (optional)
½ tsp oil
Salt to taste.

Method:
Wash the raw peanuts and soak it in water for about 2 hours.
Then pressure cook with salt for 2 whistles.
Or boil it in a pot till it is cooked.
Strain the water and keep aside.

Heat a wok with the oil, add in the mustard and urad dal.
Let it splutter, add in the curry leaves, onion and sauté well.
Now add in the green chillies, ginger and stir well.

Now add in the boiled peanuts, carrot and the coconut scrapings.
Stir till all the ingredients are mixed well.
Remove and serve hot.
