OOLAN


OOLAN

Ingredients:
1 cup ash gourd cut into half inch cubes
½ cup black eyed beans soaked and boiled till cooked
4 green chillies slit and cut across
2 cups coconut milk
Salt to taste

1 tbs coconut oil
1 sprig curry leaves

Method:
Place the cut ash gourd and green chillies in a saucepan.
Pour enough water to cover the vegetable.
Add salt and cook over medium heat till the ash gourd is cooked.

Pour in the coconut milk, the boiled beans, and bring to a slow boil.
Reduce heat and simmer for 5 minutes.
Remove from heat and garnish with coconut oil and curry leaves.
Stir gently and keep covered for ten minutes,
to allow the flavors to blend. Serve hot with plain rice.
