MOONG DAL PAYASAM
Ingredients:
1 cup split green moong dal roasted
1 cup thick coconut milk
3 cups thin coconut milk
¾ cups brown sugar or more to taste
3 tbs ghee
2 tbs of coconut cut into small pieces and roasted in ghee
¼ tsp cardamom powder
1 tbs cashew nuts roasted in ghee
1 tbs raisins roasted in ghee
Salt to taste.
Method:
Take 1 cup of split moong dal. Roast it till nice aroma comes.
Add little water to the brown sugar, melt it and strain it.
Now boil the moong dal and salt with the 3 cups of thin coconut milk.
Cook the dal on a medium heat till the dal is cooked.
Do not let the dal to over cook and become mushy.
Most of the coconut milk would have been absorbed by now.
Add more thin milk if needed.
Mash the dal lightly with a spoon, add the strained brown sugar.
Stir and make sure that the dal does not stick to pot.
Now add the cup of thick coconut milk and bring to boil.
Off the stove, add in the cardamom powder, cashew nuts,
Raisins and the coconut bits. Stir nicely. Let it rest for an hour.
The payasam will thicken a bit during this time.
You can serve it hot or chilled.
