FRIED LADIESFINGER / ladiesfinger potato dry curry

Here is a simple side dish.

FRIED LADIES FINGERS.

Ingredients:

300 grms ladys fingers cut into 1 inch pieces’
1 big onion chopped fine
2 pips garlic smashed
3 green chillies sliced fine
1 big tomato chopped
2 potatoes cut into cubes
½ inch ginger chopped finely
½ tsp coriander powder
¼ tsp tumeric powder
½ tsp chillie powder
Little garam masala powder
1 tbs oil
Salt to taste
Little coriander leaves, chopped.

Method:

Fry the lady’s finger till lightly brown. Keep aside.
Fry the potato cubes almost done. Keep aside

Heat the oil in a wok, add the onions and garlic sauté till soft.
Add in the , tomatoes, ginger, green chillies, masala and salt.
Stir fry till the tomatoes turn mushy.
Add in the fried potatoes and lady’s finger.
Sprinkle little water and let it simmer for a second.
Stir nicely and remove. Garnish with cut coriander leaves.
