Here is a Potato Tomato Curry
POTATO TOMATO CURRY
Ingredients:
300 grms potatoes half boiled and cut into chunks.
300 grms tomatoes cut into wedges
1 cup coconut milk
2 cups of water ( more or less )
2 sprigs curry leaves
10 small shallots
1 tomato chopped fine
Little coriander leaves for garnishing
Salt to taste
2 tbs ghee or oil
To make a paste:
1 large onion
2 green chillies
10 cashew nuts
10 mint leaves
5 garlic pods
1 inch ginger
1 tsp poppy seeds
To roast and powder:
½ tsp black pepper
½ tsp cumin seeds
½ tsp aniseeds
1 ½ tbs coriander seeds
8 dry red chillies
2 cardamoms
1 inch cinnamon stick.
½ tsp tumeric powder
2 tbs fresh curds.
Method:
Heat a pot with the ghee. Sauté the small onions and curry leaves.
Add in the chopped tomatoes and cook till mushy.
Now add in the ground paste and cook till oil separates.
Add in the water and the potatoes, let it boil for 5 minutes.
Add salt and the tomato wedges. Cook for another minute.
Now add in the roasted powder, and coconut milk.
Cook for another 3 minutes.
Add in the well beaten fresh curds.
Turn off the heat, garnish with the coriander leaves.
Serve with rice, ghee rice chappathis or roti jala.
