DRUMSTICK LEAVES ERISSERI

Ingredients:

2 cups of tender drumstick leaves
¼ cup moong dal boiled well
2 tbs grated coconut dry roast until golden colour
Salt to taste

To Grind to a fine paste:
½ cup grated coconut
2 dried red chillies
1 green chillie
1 tsp cumin seeds
¼ tsp tumeric powder

To Season:
1 tsp mustard seeds
1 tsp urad dal
2 dry red chillies broken
1 sprig curry leaves
1 tbs coconut oil

Method:
Heat a wok with the oil, add in the seasonings.
Stir well add in the ground paste.
Saute well for 2 minutes.
Add in the cooked moong dal. Mix well.
Now add in the tender drumstic leaves.
Mix well , cover and cook for about 3 minutes.
(add little water if you think its needed for the leaves to cook)
When the leaves are cooked, sprinkle the roasted coconut.
Stir well and remove. Serve with rice.
