BESAN CURD BRINJALS


Try this simple patchadi


BESAN CURD BRINJALS

Ingredients:

300 grms long brinjals cut into cubes
Salt to taste
Little tumeric powder

1 cup fresh curds well beaten
1 tbs besan flour
Little tumeric powder
1 sprig curry leaves
½ tsp mustard seeds
2 dry red chillies cut into pieces
Salt to taste
Oil

Method:
Mix the salt and tumeric powder to the cut brinjals.
Heat enough oil and fry the brinjals. Keep aside.

Mix the curds with little water , besan flour, salt and tumeric powder.
Heat about 1 tbs of oil in a wok, add in the mustard seeds,
curry leaves and dry red chillies. Sauté well.
Now add the curd mixture and cook on a low flame, till it comes
to a boil. Keep stirring it will become a bit thick.
Add the fried brinjals give a good stir and remove.

When cool keep in the fridge. This is normally served cold.
Serve as a side dish with rice.
