EGGLESS COFFEE CAKE



EGGLESS COFFEE CAKE

Ingredients:

2 cups self raising flour
2 tsp baking powder
A pinch of salt
1 tbs instant coffee granules
1 ¼ cup fine sugar
1 tsp coffee emulsion
½ cup vegetable oil
½ cup milk (more if needed)
1 tsp vanilla essence



Method:
Sieve the flour with the baking powder twice.
Mix all the dry ingredients together.

Add in the milk, coffee emulsion and oil, blend well with a spatula.
Just make sure there are no lumps.
Add in the vanilla essence. Mix well.
The mixture should be of pouring consistency.
Add more milk if needed.
Line a greased cake tin with parchment paper.

Preheat the oven. Bake at 180 degrees C till the cake is cooked.
Pierce a tooth pick at the centre of the cake.
If it comes out clean the cake is cooked.
It will take about 30 to 40 minutes.

the coffee emulco is a concentrated coffee.
They have all sorts of emulco, chocolate, orange, strawberry and so on.
It gives a dark colour and the smell to the item we are cooking.
You can bake the coffee cake without the emulco.
Just add little bit more of the coffee powder.

Dear friends I made this coffee cake and iced it with coffee butter icing.
I used 300 grms soft butter, 300 grms sifited icing sugar,
little evaporated milk , 1 tbs dissolved instant coffee and little vanilla essence.
Mixed every thing nicely and did the design using a icing tube.
Sprinkled little white chocklate rice and the muli coloured sweet balls. Thanks Kugan98
