VEGETARIAN FRUIT CAKE
VEGETARIAN FRUIT CAKE
Ingredients:
230 grms of self raising flour
A pinch of mixed spice powder
200 grms of brown sugar
230 grms of butter
1 tin of Ideal milk (evaporated milk)
300 grms mixed fruits ( chop up the fruits)
20 grms almond silvers to garnish
Method:
In a pan add the sugar, milk , butter and the mixed fruits.
Cook on low fire till the sugar and butter melts.
Let it boil slowly once and off the flame.
Let the mixture cool by itself.
Once cooled add in the sieved self raising flour with the mixed spice powder.
Mix the flour well into the butter mixture.
Grease and line the bottom of a loaf pan with
parchment paper.
Pour the mixture into the pan. Garnish with the almond silvers. Pre heat the oven to 175 degrees C
Bake for about 1 hour or until a toothpick inserted
comes out clean.
Allow to cool on a rack. Once it is cool , you can cut into neat slices.
As for the fruits, they come ready made in a box.
Or you can add any fruits of your choice for the weight.
Raisins, currants, sultanas, preserved cheery, caramalized orange peel, chopped almonds, prunes and so on.
Selviem I have a very good recipe for a nice fruit cake where eggs and brandy are used. You have to soak the fruits over night.
You have to bake the cake and keep for a week, adding little brandy over the cake. The cake improves in taste as you keep it longer covered with aluminium foil. I will post it if you want.
I do not bake this cake anymore because of the eggs and brandy.
