
Ingredients:
15 dry red chillies soaked in water for an hour.
12 pips garlic finely chopped
1 inch ginger grated finely
2 tbs red chillie sauce
1 tbs vinegar
1 tsp soy sauce
½ tsp sugar
Salt to taste
2 tbs sesame oil
Method:
Squeeze out the water from the soaked red chillies.
Grind them into a paste. The paste has to be thick.
Heat oil in a wok, add in the ginger and garlic and sauté well.
Now add in the chillie paste and cook till oil seperates.
Add in the soy sauce, red chillie sauce.
Add in the salt, sugar and mix well.
Add in little water and the vinegar.
Let it boil once nicely, remove.
The schezwan sauce is ready.
