ROTI ARAB
A Malay friend of mine taught me how to do this roti Arab.
I do not know how the name came.
After making this bread, I had ideas of making my own
fusion breads. I will post later the recipe.
Here is the recipe for Roti Arab.
ROTI ARAB
Ingredients:
500 grms high protein flour
1 tsp salt
25 grms fine sugar
25 grms margarine
5 grms bread improver
5 grms bread softner
10 grms instand yeast
250 ml warm water or a little bit more
Method:
Mix the yeast with 10 grms sugar and 100 ml warm water.
Leave it aside for about 10 minutes until the mixture froths.
In a big bowl, add in the flour, salt, sugar, bread improver,
bread softner and margarine.
Mix the flour nicely add in the margarine and mix again.
Now add in the frothy yeast and add water little by little.
Knead nicely for about 10 minutes to a smooth dough.
Now cover the bowl with a cling wrap and leave aside
for the dough to double in size. It might take about ½ an hour.
Knead the dough again , divide the dough into balls,
each weighing about 120 grms each.
Again cover it and let it rise again.
Now flatten each ball into 2 cm in thickness.
Grease a baking tin and bake the roti at 210 degress centigrade,
For about 20 minutes or till cooked.
Brush the top of the roti with a little margarine.
Note: great when you dip into a good curry.
