MUSHROOM LEMON LINGUINE PASTA

Ingredients:

200 grms linguine pasta
100 grms finely sliced tinned button mushrooms
2 pips garlic finely sliced
30 ml extra virgin olive oil
1 tsp thyme leaves
1 tbs chopped parsley
2 tbs grated paemesan cheese
1 lemon zested and juiced
Little ground black pepper

Method:
Slice the mushrooms and put them in a big bowl.
Add in the olive oil, salt minced garlic, lemon juice and zest.
Add also the thyme leaves. Mix well.

Cook the pasta till al dente.
Drain the pasta loosely, retaining some water.
Quickly put the pasta into the bowl with the olive oil mixture.

Toss everything together well, and then add in the parsley, cheese,
pepper and toss again well. Serve at once.
