HOTEL STYLE VEGETABLE FRIED RICE

Ingredients:

1 cup basmati rice
100 grms cabbage cut into squares
100 grms carrot cut into cubes
100 grms capsicum cut intp squares
100 grms beans cut small
100 grms onions chopped
100 spring onion cut into lengths
8 pips garlic chopped fine
½ inch ginger chopped fine

½ tsp salt
½ tsp pepper powder
½ tsp sugar
Little aji no motto
Little vinegar or lime juice
1 tbs oil

Method:
Cook the basmati rice with little salt till ¾ cooked.
Drain and keep aside to cool.

Heat oil in a wok, add in the chopped onions.
Sauté until ¾ fried , add in cabbage, carrot, capsicum,
beans, spring onion, ginger and garlic.
Fry till all the veges are ¾ cooked. No water is added.

Now add in the rice , stir slowly so that the rice is not broken.
Sim the fire, add in the salt, pepper powder, sugar,
aji no motto and vinegar or lime juice.
Taste for salt , stir the rice slowly so that the veges are
spread out evenly. Remove and serve with cauliflower manchurian.

For non vegetarians, you can serve with chillie prawns, or chillie chicken.

NOTE: No soy sauce is used in this fried rice.
