Potato Dill Fry

Potato Dill Fry (Suja)

Here's the potato dill fry. dill is known as sathakuppi


Potatoes-5-6 big ones
Onions-2 large chopped
Tomatoes-2 small
Ginger garlic paste-1 tsp
Chili powder-2 tsp
Dhania powder-1 1/2 tsp
Mustard, Urad dhal and cumin seeds to season
Sagu Masala (1Tbsp-available in packets-optional)
Dill/Soy keerai one buch-Pick from thick stems-chop roughly


Boil the potatoes till they are 3/4th done. Remove skin and chop them into medium even pieces. In a heavy bottom pan season with mustard, urad dhal, cumin seeds. Add onions and fry. Now add the chopped tomatoes and fry till the tomatoes become mushy. Add ginger and garlic paste and all the powders except the sagu masala. Add salt to taste and mix well. Add the potatoes and mix well for the masala to coat evenly. Fry for about 5 min and then add dill leaves. Continue frying till everything turns golden brown in medium heat. Add sagu masala and continue frying. Normally about 30 mins or so. If we add a little more oil(!!) than normal it comes out crispy . Can add green peas also. Tastes good by it self or with sambhar and rasam rice.
