STEAMED FISH

STEAMED FISH

Ingredients:
1 whole promfret about 500 grms
½ a lime
3 cm fresh ginger cut into strips
4 garlic pips cut into strips
2 fresh red chillies cut into strips
2 fresh mushrooms sliced
1 tomato sliced
2 tbs of soy sauce (more if needed)
1 tsp coarsely ground black pepper
Salt to taste
1 tsp sesame oil
1 stalk spring onions cut into 4 cm lengths
1 sprig coriander leaves
1 piece of banana leaf (optional)

Method:
Clean the fish of its fins and stomach contents.
Keep the fish whole with head intact.
After cleaning and washing fish, pat it dry.
Make two cuts on each side of the fish.
Now rub the fish with the lime juice, pepper powder and salt,
all over and in the cavity of the fish.
Put some ginger and garlic strips in the cavity of the fish.

Put the piece of the banana leaf on a heatproof dish.
Place ½ of the ginger, garlic on the banana leaf.
Place the fish on top of the ginger garlic.
Now sprinkle the rest of the ginger garlic, also the fresh red chillies,
Mushrooms, tomato slices, and spring onions, on and around the fish.
Drizzle the sesame oil, and soy sauce over the entire fish.

Steam fish over rapidly boiling water for about 15 minutes, or until
the eyes of the fish pop out. (This is an indication that the fish is cooked)
remove, garnish with coriander leaves and serve while hot.

Note: The banana leaf helps to remove little of the fishy smell.
You can use garlic oil if you do not like sesame oil.
