here's how to make paneer...
1. extract juice from 1 lemon n mix with a tbsp of water...you can use vinegar or sour curd/buttermilk instead...
2. bring abt a ltr of milk to a boil... reduce flame to low
3. slowly add in the lemon juice/vinegar/buttermilk...keep mixing...once u see the milk start curdling ,stop adding the juice and see if the milk is fully curdles...else add some more juice...
Let cook for a minute and then switch off flame...
4. line a wide strainer with a clean cloth and pour the curdled mixture...the curds will now be collected in the cloth... you can also collect the whey water and use it to knead chapathi dough...
now pour some cold water over the curds and then make it into a bundle n strain out as much water from the curd as possible ...
5. hang this cheese bundle for about 1/2 hr or so... (if u want to make rasgulla,rasmalai etc,stop at this step)
6. then place on a flat surface and place a heavy weight on it and leave for ab out an hr...
7. take off the weight and remove the cloth in which it was bundles... cut into desired shapes...
